SUMMER Handling of liquid eggs by Dean Hughson,THE EGGMAN/TH Transportation,tel 702-360-5419, dean@primenet.com 5-17-01 As summer is with us again,it is always good to remind your loading/unloading staff about the correct procedures for loading tankers and to remind customers also of the potential problems at hand. 1.Be sure that the tanker is clean. Get a copy of the last wash-out ticket showing where it was done,process used, and date. 2.2. Be sure you have a copy of the proof of insurance of your tanker company and egg supplier. 3.3. When the tanker is pre-washed again,before loading,be sure that the tanker is either prechilled with liquid gas, or cold water is run through the tanker for an hour to get the residue heat out of the tanker insulation. 4.4. Be sure that the tanker is loaded cold enough to survive the trip. Almost all failures of egg loads I have seen are related to being loaded either too hot (over 35 degrees F) or the egg being too old at time of loading. Be sure that the drivers of the tanker know that the egg can perish and they need to rush the load. Last year I saw a load of egg go bad because the driver for the tanker company,not one of mine, saw Net 7 on the invoice and thought it meant that the liquid was to be delivered on the 7th day. 5.5. Be sure that the truck is unloaded as soon as the truck arrives. This is especially important for raw whole egg,raw yolk, or blends. 6.6. Keep records of departure and arrival temps. And be sure that the truckline can maintain good temps with their equipment. Some trucks lack insulation or their insulation has fallen down,after a time of being in service and thus some of the tanker is not protected. COMMUNICATIONS ARE THE NAME OF THE GAME when dealing with perishable products like eggs. Communicate with your staff the importance of following quality control with your products and your customers.
